It’s been pretty cold lately, especially in the south. Cold calls for soup to warm you up. One of my families favorite meals is potato soup. After trying several different recipes, I tend to go with the simple and basic. I can always add different spices if I’m looking for a little extra favor that day so this is the perfect base. This can be done on the stove if you need something quick or in the crockpot if you like to set it aside and let it cook for a few hours.

I’ve made this using left over baked potatoes, frozen hashbrowns, and freshly diced potatoes. Personally I prefer going with the freshly diced and cooking with in chicken broth or stock to add more flavor. When I used hashbrowns I went with Walmart brand which are basically diced crinkle fries. They weren’t my preference because they became a bit mushy. They are a quick fix though if you are in a hurry.

I season with only salt and pepper to taste but have added other seasonings as well. A packet of Hidden Valley Ranch adds a nice change. I also like to add Greek seasoning or oregano at times. When I’m ready to serve I add in a little milk or heavy cream. Which ever I have on hand at the time. I like to leave to toppings for everyone to add for themselves. Adding bacon to the soup would give it a little more flavor, but it also makes the bacon a little soggy and I like my bacon crispy. Cheese is just easier to add on top as well. You can also add green onion, sour cream, hot sauce, ranch, etc. Go crazy.

Ingredients

6-8 potatoes, diced

32 oz. Chicken stock or broth

1t salt

1/2t pepper

1c milk

Toppings (All optional)

Bacon, chopped

Shredded cheese

Green onion, chopped

Dice your potatoes and add them to your chicken broth. If you want to use frozen hashbrowns, use 1 28 ounce bag. If you prefer powdered chicken broth that works too. I’ve even used beef powder in a pinch. Season with salt, pepper, and whatever other seasonings you prefer. Remember the broth is sometimes salted and the bacon and cheese will add salt. Cook your potatoes until tender. Add in your milk or heavy cream and it’s ready to serve. Add your desired toppings and enjoy.
